This sake is named after the “Seven Twenty Twenties” making technique that Takagi sake is proud of. Using Aisan rice as raw material, polishing rate is 40%. It is also a raw sake.

It is said that for every seven parts of sake, there are 20 parts of sake meal. In ancient times, there was a superstitious rumor that if a sake brewer made sake in the way of "seven drops and twenty kan", the sake brewery might go out of business. This is because it takes a lot of time and costs to refine a small amount of sake with a large amount of sake meal. However, Takagi Brewery has dispelled this myth by using the "Shichibukan" method as a symbol of their extreme brewing skills, and using it only for the finest sake, a move that has taken brewing techniques to a legendary level.

It takes about 10 hours to grind 600 kilograms of basmati rice to make 70% of the sake, and about 45 hours to grind the same weight of basmati rice to 50%.
