Contrary to its rugged appearance, this Junmai sake is so refreshing and fresh that it almost feels like a "Junmai Ginjo sake." This can also be seen in the aroma, and when poured into a glass, the sweetness of the fresh rice creates a fruity aroma with a fruity feel, stimulating the nasal cavity as it passes through your nose with a refreshing taste. When you take a sip, the soft, swelled rice flavor and the refreshing minerality slide over your tongue in a very pleasant way. Both AKABU's unpasteurized and pasteurized varieties are released with stoppers, not screw caps. Perhaps because I had moved the bottle a little before opening it, when I opened it I heard a popping sound and a little bit of sake spilled out. It's alive! I couldn't help but smile (lol). It's colorless and transparent, but it does have a bit of effervescence, so if you place something black behind it and compare it, you can see some small bubbles. The day after opening, there are a few bubbles stuck to the inside of the glass at the bottom. When you open the bottle, you can smell a slight aroma of apples and nuts. First comes the sweetness and fizziness, followed soon by a well-balanced sourness and umami. Even after swallowing, the umami and pleasant bitterness linger in the back of your throat for a long time, so it's a flavor you'll want to savor slowly and carefully. The day after opening, the fizziness was gone, and the sake was sweeter and juicier. This powerful-bodied unpasteurized sake goes well with dishes with a strong sweet and spicy flavor that can stand up to the sake, such as broiled yellowtail or boiled sea bream.
